11. Mexican Chicken-Corn Chowder


From 2001 Southern Living Annual Recipes

No snow for us here in Alabama...but we've had plenty of cold rain and wind, so last night was an ideal time to break out the soup pot and try something new.

This was a hearty, comforting soup with a great combination of flavors...it's sweet and creamy and a little spicy. I added a few sliced jalapenos to my bowl, which just kicked it up another notch.

This recipe is going in my winter rotation!

3 tbsp. butter
4 skinned and boned chicken breast halves, cut into bite-size pieces
1 small onion, chopped
2 garlic cloves, minced
2 cups half-and-half
2 cups shredded Monterey Jack cheese
2 (14 3/4-ounce) cans cream-style corn
1 (4.5-ounce) can chopped green chiles, undrained (I used Rotel, drained)
1/2 tsp. hot sauce
1/4 tsp. salt
1/2 to 1 tsp. ground cumin

Melt butter in a Dutch oven over medium-high heat. Add chicken, onion, and garlic, and saute for 10 minutes. Stir in next seven ingredients and cook over low heat, stirring often, for 15 minutes.

This looks like a fast and yummy soup. Wow. I have only 1 can of the corn in the house, but I could just cut the recipe in half. Good to know in case I can't get to the store on Sunday.

I accidentally made something similar a few weeks ago, but I really enjoy the combination of green chilies and creamy dairy.

Oh, I could use some hot soup...because we did get the snow.
This sounds way better than the canned chicken noodle I just ended up eating.

Chowder is so comforting on a cold winter day. This sounds delicious, although I may go lightly on the hot sauce - I'm a wuss!

This soup sounds so rich and yummy. I'm on my way to visit my 89 year old mother who loves chicken and needs to add a few pounds. I'm taking this recipe with me. Thanks for sharing.

Just to let you know I tried this one. I only made a couple of changes. We didn't have quite that much chicken, we didn't have any hot sauce, and I added about a half a cup of frozen corn. It was very, very good. This recipe is a keeper.
